Sweet'n Sour Shrimp

Here is another recipe from our 2 week challenge. We always have rice on hand and I just happened to stock up on some organic Edamame beforehand. We also had this delicious sauce left over from another meal and needed to use it up so we decided to use it on some shrimp! Chinese food is a favorite of ours and one night while looking up some recipes, I discovered the secret to fried chinese food! It's so easy and really unexpected. The meal we used the sauce on before was actually exactly the same except instead of shrimp, we used chicken! Here's what I did.

We bought a pound of shrimp. You can also use a pound of boneless, skinless chicken breast chopped into bite-size chunks.

Next, you'll need about a cup of cornstarch and 2 eggs all mixed up (yes, eggs! who woulda thought right?!).

You coat the shrimp with cornstarch and then dunk it in the egg. IMG_0315 
Then fry them up in a little canola oil until they're golden brown on both sides. IMG_0317 
Next, place in a baking dish and smother in sauce, we used sweet'n sour. For the next go around, I want to try some General Tso sauce (my favorite). You could use a variety of sauces with this. IMG_0318 
Then bake at 350 for about 20-25 minutes. IMG_0319 
And serve!

It was SO good guys. I will definitely be saving this recipe. I love that you can do this with chicken and shrimp, maybe I'll even try a mixture of the two some time! Mmmmmmm. The best thing about this though is that it doesn't involve a bunch of ingredients. Very simple. Perfect.

Girlish Garb: Navy Baby

First, sorry about the squinty-face-ness. I'm not used to taking outdoor pictures! But I love this spot.... Anyways, this is kind of a boy-ish outfit? I thrifted this dress recently and LOVE it! It's basically the same pattern as my handmade dresses and is the most comfortable thing ever. It was a bit chilly this day so I threw on this cardigan (my favorite) and some knee high socks! Also, I am love with this necklace.

Last Weekend: Beach Visit

Last weekend, we went on our first real beach trip of the year! The weather was perfect- not too hot but not too cold! The water was a little chilly but I didn't expect to be in it all that much since Eliza can't swim. We laid out on our towels, ate tons of oranges, built some sand castles, and watched the boys surf.

Isn't this chubby little boy so cute? He may be too young but I think he was definitely checking Eliza out. Compared to him, she looks so tall and skinny! It was crazy, this was the first time I looked at her and saw a little girl.... and not my sweet innocent baby. Oi vey, she's going to be a man killer.

Today I'm working on some more handmade dresses. Hopefully I can get them done and in the shop by Friday-ish? I'm sad March is coming to an end, it's been such a great month. But April is my birthday month and I'm FINALLY turning 21! Woop woop! I hope next month will be just as good as this one!

P.S. I changed a few things on the blog, one big thing being the header! I'm going for ..... simplicity (and less girly?). I still really like the floral background I had, maybe I'll bring it back in the summer. Anyways, what do you think? Like or dislike?
