Vegan Stuffed Bell Peppers

You know I love my stuffed bell peppers. My last ones were vegetarian but this time, I'm taking another leap and going for Vegan stuffed bell peppers! And I must say, they were pretty delish. Here's how I did it: photo 5
Ingredients: 
Filling: 
1/2- 1 Onion 
2 cloves garlic
1 can of black beans 
1 medium sweet potato, cubed and boiled/steamed
2 roma tomatoes, diced
1 Jalapeno or handful of tabasco peppers (optional)

3/4 cup quinoa (cooked)

1 tbsp chili powder
1/2 tsp cumin
1/2 tsp oregano
1/2 cup cilantro
salt and pepper 

3 large bell peppers, cut in half and gutted

1. Saute onion and garlic with the tomatoes. Then throw in the black beans, sweet potato, and peppers. 
2. Add in spices as well as quinoa and cook until well combined. 

Avocado cream sauce: 
1 1/2 avocado 
2 tbsp water 
2-3 tbsp lemon  
1-1/2 cup cilantro
salt 
1/2 tsp garlic powder 
3/4 tsp cumin 

3. Blend ingredients for sauce in a food processor or blender, adding more water if needed.  
4. Fill bell peppers with filling and top with avocado cream sauce. 
5. Cook on 350 for about 20 minutes.
