Oh man, what gets you more in the mood for fall than butternut squash?!
I was inspired by these two recipes- 1,2 to make a fall version of the classic grilled cheese. So maybe this isn't the healthiest sandwich ever.... but hey, at least it's got some veggies in there. Right?
Here's the rough recipe:
1. Cut slices of butternut squash, spray/slather with coconut oil, and drizzle with honey. Sprinkle on smoked paprika, chili powder, and cayenne to taste. Cook in oven on 425 for about 15 minutes or until slightly browned.
2. Meanwhile, saute onion in coconut oil until soft and then add the garlic. Cook for a few minutes until garlic is slightly browned. Remove from heat.
3. Once your butternut squash is done, it's time to assemble the sandwich! Slice your bread (with a little coconut oil spread on it to help it crisp), slap on some spinach and monterrey jack, top with sauteed onion/garlic, and last, the cooked butternut squash.
4. Then grill your sandwich until the cheese is melted and bread is lightly browned and perfectly crispy.
Oh man, the honey and butternut squash give this a delicious sweet taste while the chili powder and cayenne make it a little spicy and all of that topped with melted monterrey jack?! Oh. So good.
